History
Citrus hystrix has a long cultural and culinary history across Southeast Asia and neighbouring regions. The aromatic leaves and textured fruit peel are used in Thai, Indonesian, Malaysian, Cambodian and other regional cuisines and household traditions. The Thai name makrut is now increasingly used in English because the older trade name can be offensive in some communities. The peel oil is valued for its distinctive fresh, green citrus fragrance.
